Asturian Bean and Sausage Stew Recipe
This delicious recipe from the Asturian Province (north of Spain), has been provided by Diego's Restaurant, one of the most authentic Spanish restaurant in the US.
Ingredients
16 oz. of large white beans
8 oz. chorizo (Spanish sausage)
4 oz. smoked blood sausage
1 lb. shoulder pork (or Smoked ham)
1 lb. smoked bacon chopped
1 Bay leaf
4 garlic cloves
10 saffron threads
Water – Salt |

Instructions:
Soak the beans overnight. In a dutch oven, add water, beans, bay leaf, saffron and chopped garlic cloves and a pinch of salt and simmer for approximately one hour until the beans are tender. Then add the smoked chorizo, ham, bacon and blood sausage.
Serves 4 people.

1 lb. de fabas
½ lb. de chorizo
¼ lb. de morcilla ahumada
1 lb. de lacon o jamón ahumado
1 hoja de laurel
4 dientes de ajo
1 cebolla grande
10 hebra de azafrán
Agua – Sal
Esta receta está preparada para servir a 4 comensales
¿Cómo preparar la Fabada?
Se ponen a remojar las fabas desde la noche anterior. Se cuecen en un caldero con el laurel, azafrán y dos dientes de ajo picado. Cocer por aproximadamente una hora que las alubias estén tiernas, agregar los chorizos y la morcilla.
